Before the ceremony begins, our arranged Bai tea master will explain how each stage—bitter, sweet, and complex—corresponds to a phase of human experience. As you savor each course, you’ll be guided to mindfully connect the flavors with their deeper symbolism, transforming the tasting into a reflective journey.
  2. Can I personally roast the leaves for the first, ‘Bitter’ tea? Yes. By a charcoal hearth, you will take a small clay pot and raw tea leaves. Under the master’s guidance, you’ll learn to shake the pot over the flames, listening for the crackle and watching the leaves turn a toasted amber. This hands-on process lets you understand how effort transforms the raw into something profound and aromatic.
  3. How do I assemble my own cup of the second, ‘Sweet’ tea? For the second course, you become the creator. We will provide you with local honey, walnut slices, toasted sesame, and pieces of crispy “Rushan” (dairy curd). Following the master’s instructions, you will layer these ingredients in your cup before the hot tea is poured, crafting your own personalized symbol of “sweet reward.”
  4. What is in the mysterious third ‘Aftertaste’ tea, and how should I contemplate it? Prior to serving, the master will show you the traditional spices—like ginger, cinnamon, and peppercorn—that create the tea’s complex profile. As you slowly sip, you’ll be encouraged to identify the layers of flavor and to reflect quietly on what a “lasting aftertaste” means to you personally, in the serene setting of a traditional courtyard.
